Quail & Quinoa with the Wok Man

When Bob Woodall fires up The Galley with his buddy Wiley McNeil—better known around town as the “Wok Man”—you know something good is headed for the plate. Wiley’s cooking apparatus began its life as a John Deere disc pan, and the clever rig steadying it over the flame came off a vehicle. Together the two home cooks turn a batch of fresh Henry County quail and a handful of simple garden vegetables into something Bob can only call beautiful. This is humble food, done right, by two guys who plainly love the work. Come see how it comes together.
For the quail
- Fresh quail (4–8, depending on servings)
- Zesty Italian dressing (for marinade)
For the quinoa & vegetables

- Cooked quinoa
- Bella mushrooms, sliced
- Onion, thinly shaved
- Asparagus
- Sweet peppers
- Olive oil
- Seasoning blend of choice (Bob and Wiley reach for Meat Church, Kinder's, and a white/citrus "Blanco"-style rub)
- Red pepper flakes
- Fresh lime
Roast the quail
- Marinate the quail in a little zesty Italian dressing.
- Lay them out on a Lodge flat-iron griddle (or any oven-safe griddle/sheet).
- Roast in a convection oven about 20 minutes, until tender. Set aside.
Build the quinoa & vegetables
- Heat a wok or large skillet over high heat with a drizzle of olive oil.
- Add the bella mushrooms and shaved onion. Sauté until softened, seasoning to taste as they cook.
- Finish with a squeeze of fresh lime and a pinch of red pepper flakes.
- In a little more olive oil, sauté the asparagus separately just until crisp-tender.
- Plate a bed of quinoa, spoon the mushrooms and onions over the top, and add the sweet peppers and asparagus alongside.
Plate it up
Set one or two roasted quail on top and serve. Humble food, done right.

In his spare time, Bob is President of Bob Woodall Air Care Systems. Bob and his buddies operate one of the leading residential and commercial HVAC businesses in Southeastern Alabama. He is currently serving or has served on just about every Board of Directors and in just about every civic organization you might name. There is a saying around the Dothan/Wiregrass area that has now made it’s way onto a lot of billboards. It’s simple and when you say it out loud, everyone smiles because they get the connection. CALL BOB.
